Popular Spanish restaurant chain Pura Brasa by Josper has expanded its selection of grilled meats with two new additions: 45 days aged Wagyu Tomahawk&nbsp;and 200 Days grass-fed Prime Ribs, which are available this month.

Being the first overseas outpost, Pura Brasa has been a favourite among those working and living around the vicinity around Tanjong Pagar. The restaurant is most popular for its Josper-grilled Spanish dishes. For those unfamiliar with Josper, it is a brand of charcoal ovens widely used by&nbsp;<a href="https://www.luxuo.com/lifestyle/gastronomy/top-7-restaurants-in-singapore-delivery-takeaway-work-from-home.html" rel="noreferrer noopener" target="_blank">Michelin-starred restaurants</a>&nbsp;and celebrity chefs, including Juan Pozuelo, Carles Tejedor, and&nbsp;<a href="https://www.luxuo.com/tag/martin-berasategui" rel="noreferrer noopener" target="_blank">Mart&iacute;n Berasategui&nbsp;</a>&mdash; who holds twelve Michelin stars in total, more than any other Spanish chef.

Just in time for the next phase of Singapore&rsquo;s gradual reopening &mdash; where groups of five can finally enjoy a meal together &mdash; Pura Brasa plans to entice you with their dry-aged beef fare. The technique of using Dry Aging is a traditional way of yielding extremely tender meat that&rsquo;s enriched with robust flavours and the process often takes between several weeks to several months and the conditions for maturation are strictly controlled.&nbsp;

To accurately monitor the process, Pura Brasa ages its own beef using the award-winning DRY AGER meat maturing fridge. This state-of-the-art machine is able to create a microclimate that encourages the growth of beneficial microbes, which draws out moisture from the meat to allow enzymes to tenderize it. While the resulting portion of the meat becomes smaller, the quality is greatly enhanced as a result of aging.&nbsp;

To enjoy a full Pura Brasa experience, be sure to also try out their signature Josper Grilled Spanish Pork Ribs and Charcoal Seafood Paella. The former is created in two stages: the ribs are slow-cooked for 20 hours before they are grilled over the charcoal ovens; the latter offers generous portions of top-quality&nbsp;<a href="https://www.luxuo.com/properties/uncovering-property-gems-australian-property-market.html" rel="noreferrer noopener" target="_blank">Australian</a>&nbsp;mussels and tiger prawns.
